Ingredients (Paragraphs)
1 (14.5 oz.) can Peach Slices - Pear Juice Concentrate, drained and chopped
1 (15 oz.) can Whole Kernel Corn, drained
1 (15 oz.) can Organic Black Beans, rinsed and drained
1 juice and zest of 1 lime
3 tbsp. Jalapeño pepper, seeds removed and diced
0.75 cup red onion, chopped
2 tbsp. honey
0.25 cup fresh mint leaves, minced
salt to taste
Directions

In a large bowl, mix together Peach Slices, Whole Kernel Corn, Organic Black Beans, lime juice, lime zest, jalapeño, onion, and honey. Gently fold in fresh mint and salt to taste. Serve room temperature or cold from the refrigerator.
