Savory Whole Potatoes


1 (15 oz.) can

Whole White Potatoes, drained

1 (14. 5 oz.) can

crushed tomatoes

1 cup

leeks, sliced and separated into rings

3 cloves

garlic, minced

0.5 tsp.

dried thyme

0.25 tsp.

dried oregano

0.5 tsp.

0.5 cup

beef broth

3 tbsp.

butter, sliced


Original Recipe Makes 4 Servings

Preheat oven to 450oF. Lightly grease 8-inch pie pan and add potatoes. In small mixing bowl, combine tomatoes, leeks, garlic, and seasonings; pour into pan. Add broth to mixture and place butter on top. Bake uncovered about 30 minutes.
