Mediterranean Meat Loaf

Ingredients

1 (8.5 oz.) can

Peas & Carrots, drained

1.5 lb.

ground turkey

0.67 cup

Italian-seasoned bread crumbs

0.67 cup

red onion, chopped

3 cloves

garlic, minced

0.5 tsp.

salt

0.5 tsp.

pepper

eggs

1 (14.5 oz.)

can diced tomatoes with onion and herbs

Original Recipe Makes 6 Servings

Preheat oven to 350o In large mixing bowl, mix turkey, bread crumbs, onion, garlic, salt, pepper and eggs. Add peas and carrots; mix well. Place mixture in 9x13-inch baking dish and shape into a loaf. Bake 30 minutes. Spoon diced tomatoes over top of meat loaf and bake an extra 30 minutes. Let stand for at least 5 minutes before serving.
