Fresh 'N Fruity Summer Salad



1 (16 oz.) jar

Sliced Pickled Beets, undrained

0.25 cup

orange juice

1 tbsp.

dried basil

0.5 tsp.

black pepper

0.5 cup

canola oil


1 (6 oz.)

pkg. ready-to-eat baby spinach or other greens

2.5 cups

honeydew or melon, cut into bite-sized pieces


peaches, pitted and cut into wedges

1 cup

fresh blueberries and/or strawberries (sliced)

0.25 cup

sliced almonds, toasted


Original Recipe Makes 8 Servings

For dressing, drain beets, reserving 1/4 cup liquid. Set beets aside. In small bowl, combine reserved beet liquid, orange juice, basil and pepper. With wire whisk or fork, whisk in oil. Set aside. For salad, arrange spinach, reserved beets, melon, peaches and berries on large platter. To serve, drizzle with dressing; toss lightly. Sprinkle with almonds
